I have been told, on some models it is necessary and other models it is not necessary to hoist the engine to remove the oil pan for a gasket change, is this true? Also, How can I find out if my model falls into this category, is this based on VIN or engine?

It is true, but it is not based on VIN or engine, more on year model. Have you looked under the car? Basically if you can see the oil pan and nothing is obstructing it from dropping down when unbolted the engine would not need to be hoisted.
